This cake was thought to have originated in the American south, but if you do a little digging the cake was actually created by the Jamaican Tourist Board in the 1960's to draw tourists to the island.  (Their national bird is the hummingbird, which in Jamaica is called the "doctor bird".) Using fruits that Jamaica is known for, such as bananas and pineapple, this cake is the perfect interruption to the long winter months we still yet to go in Minnesota! The crushed pineapple gives it its delightful, tropical taste. Serve it a little bit chilled rather than at room temperature; I think that makes a difference in the flavors.
